Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk (or regular milk) Regular milk can be used with 1 tablespoon of vinegar or lemon juice added.
  • 1 large egg
  • 2 tablespoons melted butter

For Cooking

Preparation

  • In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients. Stir gently until combined. Do not over-mix; it’s okay if there are some lumps.

Cooking

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or butter.
  • Pour about 1/4 cup of batter for each pancake onto the skillet.
  • Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  • Repeat with remaining batter.

Notes

Use fresh baking powder and do not over-mix the batter to ensure the pancakes rise well. Adjust the heat of the skillet as needed to avoid burning the pancakes. Consider adding vanilla extract or cinnamon for more flavor.
