Ingredients
  

For the beef

  • 2 pounds beef chuck roast Cut into large chunks
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups beef broth Substitute with chicken broth if preferred

For the sauce

  • 2 dried guajillo peppers Toast and soak in hot water
  • 2 dried ancho peppers Toast and soak in hot water
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Preparation

  • In a skillet, dry toast the guajillo and ancho peppers until fragrant. Then soak them in hot water until softened.
  • Blend the soaked peppers with chopped onion, minced garlic, cumin, oregano, paprika, salt, and pepper until smooth.

Cooking

  • In the crockpot, place the beef chuck roast and pour the blended sauce over it.
  • Add the beef broth and bay leaves.
  • Cook on low for 8 hours or until the beef is tender.
  • Shred the beef and serve in bowls with the consomme or as tacos.

Notes

For more depth of flavor, marinate the beef in the blended sauce for a few hours or overnight before cooking. Use fresh herbs like cilantro as a garnish for added freshness and color. Adjust the spice level by adding more or fewer peppers according to your taste.
