  • 1 medium butternut squash, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1 large onion, sliced
  • 1 cup heavy cream Can substitute with half-and-half or a dairy-free alternative.
  • 1 cup shredded cheese (cheddar or gruyere) Feel free to experiment with different types of cheese.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 cups buttery crackers, crushed
  • 1/4 cup brown sugar

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a pot, boil the butternut squash until tender, then drain and mash.
  • In a skillet, melt the butter and caramelize the onions until golden.
  • In a mixing bowl, combine the mashed squash, sautéed onions, heavy cream, cheese, salt, pepper, and nutmeg.

Baking

  • Spread the mixture in a casserole dish and top with crushed crackers and brown sugar.
  • Bake for 30-40 minutes, until golden brown and bubbly.

  • Serve warm and enjoy!

Notes

For extra flavor, add garlic to the onions while caramelizing. You can make the casserole ahead of time and bake it right before serving. Store leftovers in an airtight container for up to 3 days.
