  • 1 medium Butternut Squash, cubed
  • 2 tablespoons Olive Oil or canola oil
  • 3 tablespoons Brown Sugar, light or dark Based on preference
  • 2 tablespoons Unsalted Butter or vegan butter
  • 1 teaspoon Ground Cinnamon Can substitute with allspice or nutmeg
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper Or white pepper
  • 2 tablespoons Fresh Parsley, chopped Optional for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the butternut squash into bite-sized pieces.
  • In a large bowl, combine the cubed squash, olive oil, brown sugar, melted butter, cinnamon, salt, and pepper. Mix well to coat the squash evenly.

Roasting

  • Spread the squash mixture onto a baking sheet in a single layer.
  • Roast in the preheated oven for about 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through cooking for even roasting.

Serving

  • Once done, remove from the oven and sprinkle with fresh parsley if desired. Serve warm.

Notes

Cut the squash into even pieces for uniform cooking. Adjust the amount of brown sugar for desired sweetness. Experiment with other spices like nutmeg or cayenne pepper for added flavor. Don't overcrowd the baking sheet to prevent steaming.
