  • 1 medium butternut squash, peeled and diced
  • 2 pieces apples, peeled, cored, and sliced Choose ripe apples for best flavor.
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup Adjust for sweetness preference.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup butter, melted
  • Salt to taste

Optional Toppings

  • pecans or walnuts Toast for added crunch.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the diced butternut squash and sliced apples.
  • In another bowl, mix together the brown sugar, maple syrup, cinnamon, nutmeg, melted butter, and salt.
  • Pour the mixture over the squash and apples, and toss to coat evenly.
  • Transfer the mixture to a greased baking dish.

Baking

  • Bake for 25-30 minutes or until the squash is tender.
  • Optional: sprinkle with pecans or walnuts before serving.

Serving

  • Serve warm as a side with roasted meats or as a dessert with vanilla ice cream.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven or microwave. Variations include adding raisins or cranberries, or using different spices like ginger or clove.
