  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Preparation

  • In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  • Add the sausage and cook until browned.
  • Stir in the cabbage and potatoes, cooking for a few minutes.

Cooking

  • Pour in the broth and add thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20-30 minutes.

Serving

  • Serve the soup hot in bowls, optionally adding a sprinkle of fresh herbs like parsley or a dash of hot sauce for flavor.

Notes

You can store leftover soup in an airtight container in the refrigerator for up to 3-4 days. To freeze, place cooled soup in freezer-safe containers or bags and keep for up to 3 months. Thaw in the refrigerator overnight and reheat on the stove or in the microwave. Consider making this soup vegetarian by using plant-based sausage and vegetable broth.
