  • 1 cup bell pepper, chopped
  • 1 cup celery, chopped
  • 2 tbsp Cajun spices Adjust according to heat preference.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 cup cheddar cheese, shredded Optional for serving.

Preparation

  • In a large pot, cook the andouille sausage over medium heat until browned.
  • Add diced potatoes, chopped vegetables, and Cajun spices, stirring to combine.
  • Pour in enough water or broth to cover the ingredients and bring to a boil.
  • Reduce heat and simmer until the potatoes are tender.
  • Stir in heavy cream and shredded cheddar cheese, heating until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste.

Notes
