  • 1 pound red beans Use dried red beans for best texture and flavor.
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 link smoked sausage, sliced Consider adding more heat if desired.
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 2 tablespoons Cajun seasoning Adjust to taste for spiciness.
  • 1 leaf bay leaf
  • 2 cups cooked white rice Serve over rice.
  • to taste Salt and pepper Adjust seasoning based on preference.
  • for garnish Green onions Chopped, for garnish.

Instructions
 

Preparation

  • Rinse and soak the red beans overnight in water. Drain and set aside.

Cooking

  • In a slow cooker, combine the soaked beans, onion, bell pepper, celery, garlic, sausage, chicken broth, Cajun seasoning, and bay leaf.
  • Cover and cook on low for 6-8 hours or until the beans are tender.
  • Remove the bay leaf and season with salt and pepper to taste.
  • Serve over cooked white rice and garnish with green onions.

Notes

To store leftovers, let cool completely, then refrigerate for 3-4 days or freeze for up to 2-3 months. Reheat by adding a little water or broth if thickened.
