  • 1 lb Smoked sausage Sliced
  • 1 cup Rice Uncooked, white rice
  • 1 cup Bell peppers Diced, any color
  • 2 tbsp Cajun seasoning Adjust to taste
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Chicken broth Substitute with vegetable broth for a vegetarian version
  • 2 tbsp Olive oil For cooking

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add sliced smoked sausage and cook until browned.
  • Stir in chopped onion and minced garlic, cooking until softened.
  • Add diced bell peppers and cook for a few more minutes.
  • Stir in uncooked rice and Cajun seasoning.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes until rice is cooked.
  • Fluff the rice with a fork and serve.

Notes

For extra flavor, let the sausage brown well before adding the other ingredients. Feel free to add other vegetables like corn or spinach for more variety. Adjust the amount of Cajun seasoning based on your heat preference.
