Main Ingredients

  • 8 oz pasta Any shape like penne or rotini can be used.
  • 1 lb Cajun sausage, sliced You can substitute with smoked sausage or chicken.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 cup heavy cream
  • 1 cup shredded cheese (Cheddar or Parmesan)
  • 2 tsp Cajun seasoning Adjust based on spice preference.
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Instructions
 

Cooking the Pasta

  • In a large pot, cook the pasta according to package instructions; drain and set aside.

Cooking the Sausage and Vegetables

  • In the same pot, add the sliced sausage and cook until browned.
  • Add the onion, bell pepper, and garlic; sauté until the vegetables are soft.

Making the Sauce

  • Stir in the diced tomatoes, heavy cream, Cajun seasoning, salt, and pepper.
  • Bring to a simmer, then mix in the cooked pasta and shredded cheese.
  • Cook until the cheese is melted and the sauce is creamy, stirring occasionally.
  • Garnish with fresh parsley before serving.

Notes

This dish pairs nicely with a green salad or crusty bread. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk or cream to loosen the sauce if needed.
