  • 1 cup cooked quinoa Use pre-cooked quinoa for quicker preparation.
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli) Fresh, seasonal vegetables are recommended for best flavor.
  • ½ cup black beans, drained and rinsed Canned beans work well for convenience.

Seasoning and Garnish

  • 1 tablespoon olive oil For sautéing the vegetables.
  • 1 tablespoon lemon juice Adjust according to taste.
  • to taste salt and pepper Season to your preference.
  • fresh herbs (cilantro or parsley) Optional, for garnish.

Cooking

  • Heat the olive oil in a pan over medium heat.
  • Add the mixed vegetables and sauté for about 5 minutes or until they are tender.
  • Stir in the black beans and cook for another 2-3 minutes.
  • In a large bowl, mix the cooked quinoa with the sautéed vegetables and black beans.
  • Drizzle with lemon juice and season with salt and pepper to taste.
  • Toss everything together until well combined, and serve warm.

This dish can be served warm or cold, and works well as a main dish or a side. Pair with a light salad or grilled chicken for a complete meal. Store in an airtight container in the fridge for 3-4 days, or freeze portions for later use.
