  • 2 cups shredded cheddar cheese Other cheeses like Monterey Jack or mozzarella can be used.
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • In a large pot, heat olive oil over medium heat.
  • Add ground beef and cook until browned.
  • Stir in diced potatoes and beef broth; bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Stir in heavy cream and cheddar cheese until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with parsley and additional cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days, or freeze for up to 3 months. Stir after adding cheese to prevent clumping. For extra nutrition, consider adding more vegetables.
