Ingredients
  

Main Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth Homemade broth for added flavor.
  • 1 tsp chili powder Adjust more for spicier flavor.
  • 1 tsp cumin
  • to taste Salt and pepper
  • as needed tbsp Olive oil for sautéing

Instructions
 

Cooking

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
  • Add the ground beef and cook until browned. Drain excess fat if necessary.
  • Stir in the chili powder, cumin, salt, and pepper.
  • Add the black beans, diced tomatoes, corn, and beef broth.
  • Bring to a simmer and cook for about 10-15 minutes, until heated through.
  • Serve hot and enjoy!

Notes

Best served hot. Can garnish with fresh cilantro or cheese. Pairs well with crusty bread or corn muffins. To store, let cool and transfer to an airtight container in the refrigerator for up to 3-4 days. Can freeze for up to 3 months.
