Instructions
 

Cooking the Tortellini

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions. Drain and set aside.

Preparing the Steak

  • While the tortellini cooks, pat the steak dry with paper towels. Season it generously with salt, black pepper, garlic powder, and smoked paprika on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steak to the skillet and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest before slicing.

Making the Sauce

  • In the same skillet, lower the heat to medium and add butter. Once melted, add minced garlic, stirring until fragrant, about 1 minute. Pour in the heavy cream and whole milk, stirring to combine.
  • Stir in the parmesan until melted and the sauce is smooth. Season with more salt and pepper to taste.

Combining Ingredients

  • Add the cooked tortellini to the sauce and mix well. Slice the rested steak and place it on top of the tortellini.

Notes

Serve this dish hot, garnished with chopped parsley and a sprinkle of red pepper flakes for a bit of heat. A side of garlic bread and a fresh salad make a perfect pairing to complete your meal. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat adding a splash of milk if needed to loosen the sauce. Use a meat thermometer to ensure your steak is cooked to the perfect temperature. For a lighter version, substitute half-and-half for the heavy cream.
