Ingredients
  

For the Beans

  • 1 pound red beans Rinse and soak overnight if possible.
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 6 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

For Serving

  • 4 cups cooked rice
  • Green onions, for garnish

Instructions
 

Preparation

  • Rinse and soak the red beans overnight if possible. Drain before using.
  • In a Crock-Pot, combine the red beans, onion, bell pepper, celery, garlic, sausage, chicken broth, Cajun seasoning, thyme, bay leaf, salt, and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or until the beans are tender.
  • Once cooked, remove the bay leaf and adjust seasoning if needed.

Serving

  • Serve the red beans over cooked rice and garnish with green onions.

Notes

For added flavor, sauté the vegetables and sausage in a skillet before adding them to the Crock-Pot. If you want a thicker consistency, mash some of the beans after cooking. Consider serving with a side of cornbread.
