Ingredients
  

For the filling

  • 1 lb beef, thinly sliced Slice as thinly as possible for better flavor absorption.
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 1 cup mushrooms, sliced
  • 2 cups beef broth
  • 1 cup cream cheese
  • 2 cups cheese tortellini, uncooked Frozen tortellini can be used; add during the last 30-40 minutes.
  • 1 cup shredded cheese (provolone or mozzarella) Feel free to change the type of cheese.
  • Salt and pepper to taste

Preparation

  • Place the beef, bell peppers, onions, and mushrooms in the slow cooker.
  • Pour the beef broth over the top and season with salt and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the cream cheese and cheese tortellini.
  • Cover and continue to cook until the tortellini is tender.
  • Stir in shredded cheese just before serving and allow it to melt.
  • Serve warm and enjoy your delicious cheesesteak tortellini!

Notes

Serve hot, garnished with extra cheese or fresh herbs. Pair with a side salad or crusty bread for a complete meal. Adjust vegetables as desired.
