Ingredients
  

Main ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 28-ounce can diced tomatoes No salt added is preferred.
  • 2 cups beef broth Can substitute with vegetable broth for a vegetarian option.
  • 2 cups elbow macaroni Use whole wheat or gluten-free for a healthier option.
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional) Add just before serving if desired.

Instructions
 

Preparation

  • In a skillet, brown the ground beef with the chopped onion and garlic. Drain excess fat.
  • Transfer the beef mixture to the crock pot.
  • Add in diced tomatoes, beef broth, elbow macaroni, Italian seasoning, salt, and pepper.
  • Stir everything together.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • If using, stir in shredded cheddar cheese before serving.

Notes

Serve hot, paired with crusty bread or a fresh salad. Top with additional cheese or fresh herbs for extra flavor. Leftover goulash can be stored in an airtight container in the fridge for up to 3-4 days or frozen for up to 3 months.
