Ingredients
  

Main Ingredients

  • 3-4 lbs beef chuck roast
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, chopped
  • 1 piece onion, quartered
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • Optional: flour for gravy

Preparation

  • In a skillet, heat olive oil over medium-high heat. Brown the beef chuck roast on all sides.
  • Place the carrots, potatoes, and onion in the crock pot.
  • Add the browned roast on top of the vegetables.
  • In a bowl, mix beef broth, garlic, Worcestershire sauce, salt, and pepper. Pour this mixture over the roast.

Cooking

  • Cover the crock pot and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender.
  • If making gravy, remove the roast after cooking and strain the broth.
  • In a saucepan, simmer the strained broth and add flour to thicken to the desired consistency, stirring constantly.
  • Serve the roast with the gravy and vegetables.

Notes

For extra flavor, season the roast with salt, pepper, and other spices before browning it. Other vegetables like celery or turnips can be added for more variety. Avoid lifting the lid of the crock pot too often during cooking to maintain heat.
