For the Garlic Mashed Potatoes

  • 4-5 large potatoes, peeled and cubed
  • 1 cup heavy cream or milk for mashed potatoes
  • Butter to taste for mashed potatoes
  • Garlic powder to taste for mashed potatoes
  • Gravy to taste store-bought or homemade

Preparation

  • Season the beef chuck roast with salt and pepper.
  • Place the roast in a crockpot and add chopped onions, garlic, carrots, and beef broth.

Cooking

  • Cover and cook on low for 8-10 hours or until the meat is tender.

Garlic Mashed Potatoes

  • While the roast is cooking, prepare the garlic mashed potatoes. Boil the potatoes in salted water until tender, then drain.
  • Mash the potatoes with butter, heavy cream or milk, and garlic powder to taste.

Serving

  • Serve the beef roast over the creamy mashed potatoes and top with gravy.

Notes

Use fresh herbs like rosemary or thyme for added flavor in the roast. Don’t rush the cooking process; low and slow cooking makes the meat incredibly tender. Feel free to add other vegetables like mushrooms or peas to the crockpot for more variety. For creamier mashed potatoes, use a potato ricer or masher to get rid of lumps.
