  • 1 lb chicken breasts Use boneless, skinless chicken breasts.
  • 2 cups broccoli florets Fresh or frozen broccoli can be used.
  • 1 cup cheddar cheese, shredded Add in the last 30 minutes of cooking.
  • 1 cup rice Use white or brown rice; adjust broth accordingly for brown rice.
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1 medium onion, chopped Adds flavor to the dish.
  • 2 cloves garlic, minced Use fresh garlic for the best flavor.
  • Salt and pepper to taste Adjust seasoning as desired.

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the crockpot.
  • Add the chopped onion, minced garlic, and broccoli florets on top of the chicken.
  • Pour in the chicken broth and add rice.
  • Season with salt and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  • In the last 30 minutes of cooking, add the shredded cheddar cheese and mix well.
  • Serve warm.

Notes

Garnish with extra cheese or fresh herbs like parsley. Serve with crusty bread or a side salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
