  • 2 cups cooked chicken, shredded
  • 3 cups cooked rice Ensure rice is cooked and cooled
  • 1 cup frozen peas and carrots
  • 1/4 cup soy sauce Can adjust for saltiness
  • 2 tablespoons sesame oil
  • 3 pieces green onions, chopped For garnish
  • 2 pieces eggs, beaten
  • Salt and pepper to taste

Instructions
 

Preparation

  • In the crockpot, combine the shredded chicken, cooked rice, peas and carrots, soy sauce, sesame oil, and green onions. Stir until well mixed.
  • Pour the beaten eggs over the mixture and stir again.

Cooking

  • Cover and cook on low for 4-5 hours or until heated through.
  • Season with salt and pepper to taste before serving.

Notes

Consider adding garlic or ginger for more flavor. You can adjust the soy sauce to your taste preference. Experiment with different vegetables based on what you have on hand.
