  • 2 pounds beef brisket or pork shoulder Choose a good cut for best texture and flavor.
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 1/2 tablespoon red pepper flakes (optional) Adjust for spiciness.
  • Green onions for garnish
  • Sesame seeds for garnish

Preparation

  • Place the meat in the crockpot.
  • In a bowl, mix together soy sauce, brown sugar, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes (if using).
  • Pour the sauce over the meat in the crockpot.

Cooking

  • Cover and cook on low for 6-8 hours or until the meat is tender.
  • Once cooked, shred the meat using two forks.

Serving

  • Serve over rice and garnish with green onions and sesame seeds.

Notes

To store leftovers, let the meat cool, and then place it in an airtight container. It can be kept in the refrigerator for about 3-4 days. If you want to keep it longer, you can freeze it for up to 3 months. For a thicker sauce, remove the meat when it’s done and let the sauce cook on high for about 30 minutes to reduce.
