  • 2 pounds boneless, skinless chicken thighs
  • 1 cup teriyaki sauce Use high-quality teriyaki sauce for the best flavor.
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Preparation

  • Place the chicken thighs in the slow cooker.
  • In a bowl, mix the teriyaki sauce, garlic, and ginger, then pour it over the chicken.
  • Add broccoli, bell pepper, and onion on top of the chicken.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  • Shred the chicken with two forks and mix it with the sauce and vegetables.
  • Serve over cooked rice and garnish with sesame seeds and green onions.

Notes

For a little extra spice, add red pepper flakes to the sauce. You can customize this dish by adding different vegetables. For a gluten-free option, use gluten-free teriyaki sauce. If you prefer, substitute chicken breasts for chicken thighs, but check for doneness periodically as they may cook faster.
