  • 1 tablespoon minced ginger Fresh is best for flavor.
  • 1/4 cup soy sauce Use low-sodium if desired.
  • 1 tablespoon sesame oil Adds a nutty flavor.
  • 1 cup chopped vegetables (like bell peppers, broccoli, or carrots) Customize based on preference.

For Serving

  • Cooked rice For serving.
  • Sesame seeds For garnish.

Preparation

  • Place the chicken in the slow cooker.
  • In a bowl, mix together the teriyaki sauce, brown sugar, garlic, ginger, soy sauce, and sesame oil.
  • Pour the sauce mixture over the chicken in the slow cooker.
  • Add the chopped vegetables on top.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken in the sauce and mix well.

Serving

  • Serve over cooked rice and garnish with sesame seeds.

Notes

For even more intense flavor, let the chicken marinate in the sauce for a few hours or overnight in the fridge before cooking. You can customize the vegetables according to what you have on hand. Use low-sodium soy sauce to reduce the salt content. For a thicker sauce, remove some cooking liquid and reduce it in a small saucepan on the stove.
