  • 2 lbs potatoes, peeled and diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth For richer flavor, chicken broth is preferable.
  • 1 cup heavy cream Substitute with half-and-half for a lighter version.
  • 1 cup shredded cheddar cheese Can substitute with other cheeses.
  • to taste Salt
  • to taste pepper
  • Chives or green onions for garnish

Instructions
 

Preparation

  • Add the diced potatoes, chopped onion, minced garlic, and broth to the slow cooker.
  • Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  • Mash the potatoes with a potato masher to your desired consistency.
  • Stir in the heavy cream and shredded cheddar cheese.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chives or green onions.

Notes

Leftover potato soup can be stored in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for up to 3 months. Let it cool completely before freezing.
