  • 1 medium butternut squash Peeled and diced
  • 4 tablespoons unsalted butter Melted
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and dice the butternut squash into cubes.
  • In a large bowl, melt the butter and mix in the minced garlic.
  • Add the butternut squash to the bowl and toss to coat with the garlic butter.
  • Spread the squash on a baking sheet in a single layer and season with salt and pepper.

Cooking

  • Roast in the oven for about 25-30 minutes, until tender and golden brown.
  • Remove from the oven and sprinkle with grated Parmesan cheese.
  • Return to the oven for an additional 5 minutes or until the cheese is melted.

Serving

  • Garnish with fresh parsley and serve hot.

Notes

Cut the butternut squash into uniform cubes for even cooking. Adjust garlic amount to taste. Consider adding herbs for extra flavor. Can include red pepper flakes for heat.
