  • 1 cup Crisp cucumbers Chopped into bite-sized pieces
  • 1 cup Juicy cherry tomatoes Halved
  • 1 small Red onion Chopped
  • 1 medium Sweet bell pepper Chopped
  • 2 pieces Lean grilled chicken breast Cooked and sliced
  • 1/2 cup Light feta cheese Crumble over the salad
  • 1/4 cup Kalamata olives Pitted and sliced
  • 3 tablespoons Olive oil For drizzling
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Preparation

  • Chop the cucumbers, cherry tomatoes, red onion, and bell pepper into bite-sized pieces.
  • In a large bowl, combine the chopped vegetables.
  • Grill the chicken breast until cooked through, then slice it and add it to the bowl.
  • Crumble the feta cheese over the salad and add the Kalamata olives.
  • Drizzle with olive oil and season with salt and pepper to taste.
  • Toss gently to combine and serve chilled.

Notes

Use ripe tomatoes and fresh cucumbers for the best flavor. You can marinate the chicken in olive oil, lemon juice, and herbs for extra taste before grilling. If you don’t like feta cheese, you can substitute it with your favorite cheese or leave it out altogether.
