  • 8 oz pasta Use your favorite type of pasta.
  • 1 lb ground turkey or beef Lean ground turkey or ground beef works well.
  • 1 packet taco seasoning Adjust spice level to preference.
  • 1 cup salsa Choose mild or spicy salsa based on taste.
  • 1 cup black beans, drained and rinsed Canned is convenient; rinsing reduces sodium.
  • 1 cup corn Can use canned or frozen corn.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a blend.
  • 1/2 cup Greek yogurt (optional) Can substitute with sour cream.
  • to taste Salt and pepper Use to enhance the flavors.
  • to taste Chopped cilantro for garnish Fresh herbs add flavor.

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • In a large skillet, brown the ground turkey or beef over medium heat until fully cooked.

Cooking

  • Stir in the taco seasoning, salsa, black beans, and corn. Cook for 5 minutes until heated through.
  • Add the cooked pasta to the skillet and mix well.
  • Top with shredded cheese and allow to melt.

Serving

  • Serve with a dollop of Greek yogurt and garnish with chopped cilantro.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. Freezing is an option; reheat before serving. For added flavor, add chopped onions and bell peppers when browning the meat. Consider using whole grain or protein-rich pasta for healthier options.
