Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the diced butternut squash, honey, olive oil, salt, and pepper. Toss until the squash is well coated.
  • Spread the mixture onto a baking sheet in a single layer.

Cooking

  • Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through.
  • Remove from the oven and garnish with fresh herbs if desired. Serve warm.

Notes

Make sure to cut the squash into uniform pieces for even cooking. You can also add nuts like walnuts or pecans for a crunchy texture. For a spicier kick, consider adding a pinch of cayenne pepper to the mix.
