Bread and Base Ingredients

  • 2 slices brioche toasts
  • 2 large eggs Use whole eggs for best flavor
  • 1 slice Gouda cheese Substitute with cheddar or pepper jack for a kick

Fresh Toppings

  • 1/2 each avocado, sliced
  • 1 handful cherry tomatoes, sliced
  • 1 handful iceberg lettuce

For Cooking

  • to taste salt
  • to taste pepper
  • 1 tbsp butter or oil For cooking the eggs

Instructions
 

Preparation

  • Toast the brioche toasts until golden brown.
  • In a small pan, heat butter or oil over medium heat.
  • Crack the eggs into the pan and cook to your desired doneness, seasoning with salt and pepper.

Assembly

  • Place the cooked eggs on one brioche toast.
  • Top with Gouda cheese, sliced avocado, cherry tomatoes, and lettuce.
  • Finish with the second brioche toast on top.

Serving

  • Serve immediately and enjoy your quick breakfast!

Notes

If you have leftovers, store them in an airtight container in the refrigerator and reheat before serving. You can also prepare ingredients the night before for quicker assembly in the morning.
