  • 1 cup quinoa Rinsed under cold water
  • 2 cups vegetable broth Use for flavor, water can be substituted
  • 1 cup mixed vegetables (like carrots, peas, and bell peppers) Can be varied based on preference
  • 1 tablespoon olive oil For sautéing vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Preparation

  • Rinse the quinoa under cold water until the water runs clear.
  • In a pot, bring the vegetable broth to a boil.
  • Add the quinoa to the boiling broth. Reduce heat to low, cover, and cook for about 15 minutes or until all the liquid is absorbed.
  • While the quinoa is cooking, heat the olive oil in a pan over medium heat.
  • Add the mixed vegetables and sauté for about 5-7 minutes until they are tender.
  • Stir in the garlic powder and onion powder, and season with salt and pepper.
  • Once the quinoa is done, fluff it with a fork and mix in the sautéed vegetables.
  • Serve hot, garnished with fresh herbs.

Notes

To store, let it cool completely, then place in an airtight container. Store in the refrigerator for up to 4 days or freeze for up to 3 months. Ensure to thaw in the fridge before reheating.
