  • 1 cup vegetable broth Chicken broth can be used for added flavor.
  • 1 cup heavy cream Can be swapped for half-and-half or plant-based cream.
  • 2 cups fresh spinach
  • 1 cup mozzarella cheese, shredded Feel free to use different cheeses like cheddar or feta.
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Cooking Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add garlic and sauté until fragrant.
  • Stir in diced tomatoes and vegetable broth, bringing to a boil.
  • Add pasta and cook according to package instructions until al dente.
  • Reduce heat and stir in heavy cream, bringing the mixture to a simmer.
  • Add spinach and mozzarella, stirring until the cheese is melted and spinach is wilted.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil if desired.

Notes

If storing leftovers, let the pasta cool completely, transfer it to an airtight container, and store in the refrigerator for up to 3 days. Reheat in the microwave or on the stove with a splash of water or broth to loosen the sauce.
