  • 1 lb ground beef Use lean ground beef to reduce excess fat.
  • 1 packet taco seasoning Feel free to use spicy taco seasoning for a kick.
  • 1 15 oz can diced tomatoes Use diced tomatoes with juice.
  • 1 cup beef broth
  • 1 cup shredded cheese Use your favorite cheese.
  • 1 cup milk Add a splash while reheating if necessary.
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional) This adds a fresh pop of color.

Preparation

  • In a large pot, brown the ground beef over medium heat until fully cooked.
  • Drain excess fat.
  • Add taco seasoning, diced tomatoes (with juice), macaroni, beef broth, and milk to the pot; stir to combine.

Cooking

  • Bring the mixture to a boil, then reduce heat and simmer for about 10 minutes or until the pasta is cooked and the sauce has thickened.
  • Stir in the cheese until melted and fully incorporated.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with chopped green onions if desired.

Notes

To store leftovers, let the One Pot Taco Mac cool completely. Then, transfer it to an airtight container and refrigerate. It will keep well for 3 to 4 days. You can also freeze it for longer storage.
