  • In a large pot, heat olive oil over medium heat.
  • Add diced onion and garlic, and sauté until soft.
  • Pour in the broth and bring to a boil.
  • Add mixed vegetables and diced tomatoes.
  • Stir in thyme, salt, and pepper.
  • Reduce heat and let simmer for about 20 minutes.
  • Serve hot.

Notes

Serve Party Soup hot in bowls. It pairs well with crusty bread or crackers and can be topped with fresh herbs or grated cheese. Store leftovers in an airtight container for up to three days or freeze for up to three months. Consider adding paprika or a dash of hot sauce for extra flavor.
