  • 1 medium butternut squash, peeled and sliced
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the panko bread crumbs, Parmesan cheese, minced garlic, olive oil, salt, and pepper.
  • Layer the sliced butternut squash in a baking dish.
  • Sprinkle the panko mixture over the squash.

Cooking

  • Bake for about 45 minutes to 1 hour, or until the squash is tender and the topping is golden brown.
  • Let it cool slightly, then garnish with fresh parsley if desired. Serve warm.

Notes

For extra crispiness, broil the dish for a couple of minutes at the end of baking. You can also add herbs like thyme or rosemary for more flavor.
