  • 1 cup unsalted butter, softened Ensure butter is at room temperature for easy mixing.
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour Can substitute with gluten-free flour if desired.
  • 1/4 teaspoon salt Reduce if using salted butter.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter and powdered sugar together until smooth.
  • Add the vanilla extract and mix well.
  • In a separate bowl, combine the flour and salt. Gradually add this mixture to the butter mixture, stirring until it forms a soft dough.
  • Roll the dough into a log shape, about 2 inches in diameter. Wrap it in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Once chilled, slice the log into about 1/4 inch thick rounds and place them on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Shortbread breve can be enjoyed plain, with tea or coffee, or dusted with powdered sugar. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
