Ingredients
  

Grains

  • 1 cup quinoa Rinsed well
  • 2 cups water For cooking quinoa

Vegetables

  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • Rinse the quinoa under cold water.
  • In a pot, combine quinoa and water. Bring to a boil.
  • Reduce heat to low, cover, and let it simmer for about 15 minutes or until all water is absorbed.
  • Remove the pot from heat and let it cool for a few minutes. Fluff the quinoa with a fork.

Mixing

  • In a large bowl, mix the cooked quinoa, bell pepper, cucumber, cherry tomatoes, red onion, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour this dressing over the salad.
  • Toss everything gently to combine.

Serving

  • Serve chilled or at room temperature.

Notes

Store any leftovers in an airtight container in the fridge. It is best eaten within 3 to 4 days. Make sure to give it a stir before serving again. Feel free to add any seasonal vegetables or for extra flavor, consider adding crumbled feta cheese or avocado.
