  • 1 cup cooked collard greens Use fresh collard greens for best flavor.
  • 1 cup cornbread crumbs
  • 1/2 cup shredded cheddar cheese Can substitute with goat cheese or feta for variation.
  • 1/4 cup chopped onions
  • 1/4 cup diced bell peppers
  • 2 pieces eggs
  • 1/2 cup buttermilk Can substitute with regular milk soured with vinegar.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the collard greens, cornbread crumbs, cheddar cheese, onions, and bell peppers.
  • In another bowl, whisk together the eggs, buttermilk, garlic powder, salt, and pepper.
  • Combine the wet ingredients with the dry ingredients, mixing until everything is combined.
  • Grease a baking dish and pour the mixture into it. Spread it evenly.

Baking

  • Bake for about 30-35 minutes or until the top is golden and the dish is set.
  • Let it cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. For longer storage, freeze in separate portions.
