  • 1 small Vidalia onion, chopped

Preparation

  • Dice chicken into uniform bite-sized pieces to ensure even cooking and tender texture.
  • Whisk together pineapple juice, brown sugar, and soy sauce until the sugar completely dissolves to form a glossy marinade.
  • Layer chicken chunks in the slow cooker with optional pineapple chunks, Vidalia onion, and green pepper.
  • Pour the prepared sauce over the chicken and vegetables, ensuring they are well-coated.

Cooking

  • Set the crock-pot to low and simmer for 4-6 hours, or on high for 2-3 hours until the chicken is fork-tender and fully cooked.
  • Mix the contents to redistribute the sauce and caramelized bits before serving.

Serving

Notes
