  • 2 medium sweet potatoes, diced Can be swapped with other root vegetables.
  • 2 medium zucchinis, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika Feel free to use other spices like cumin or oregano.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup beef broth (optional) Can add for extra moisture.
  • Fresh parsley for garnish (optional) Adds a nice touch before serving.

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onions and minced garlic, sauté until softened.
  • Add ground beef, cooking until browned. Drain excess fat if necessary.

Cooking

  • Stir in diced sweet potatoes, zucchini, paprika, salt, and pepper.
  • Add beef broth if needed, cover, and cook for about 15-20 minutes, or until sweet potatoes are tender.
  • Stir occasionally and adjust seasoning to taste.
  • Garnish with fresh parsley before serving.

Notes

This dish can be served with a side salad, bread, or on its own. Consider adding sour cream or yogurt for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
