Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined; it's okay if there are lumps.

Cooking

  • Heat a griddle or frying pan over medium heat and lightly grease it.
  • Pour 1/4 cup of batter for each pancake onto the pan.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Notes

Don’t overmix the batter; a few lumps are fine. If your pancakes are too thick, add a little more milk. Make sure the griddle is hot enough before pouring the batter. For extra flavor, try adding cinnamon or nutmeg.
