Ingredients
  

Vegetable Mixture

  • 1 cup grated zucchini Squeeze out excess moisture before mixing.
  • 1 cup grated carrots
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions

Batter Ingredients

  • 1/2 cup all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 2 large eggs For a vegan option, use flaxseed meal mixture or applesauce.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Frying

  • as needed tablespoon Oil for frying Use your choice of cooking oil.

Instructions
 

Preparation

  • In a large bowl, combine the grated zucchini, carrots, bell peppers, and onions.
  • Add the flour, eggs, salt, pepper, and garlic powder. Mix until well combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the mixture onto the pan, flattening them slightly.
  • Cook for 3-4 minutes on each side until golden brown.
  • Remove and drain on paper towels. Serve warm.

Notes

These fritters can be served warm with sour cream, yogurt, or spicy salsa, and pair well with a fresh salad. To store leftovers, cool completely, place in an airtight container, and refrigerate for up to 2-3 days. Reheat in a skillet or oven to maintain crispiness.
