  • 1 pound ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 small corn tortillas Can substitute with flour tortillas for softer texture.
  • 1 cup shredded cheese Try pepper jack or Monterey Jack cheese for variation.
  • 1/2 cup diced onions

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Stir in half of the enchilada sauce and diced onions, cooking for a few minutes until heated through.
  • Place a scoop of the beef mixture in each tortilla, roll them up, and place seam-side down in a baking dish.
  • Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

Baking

  • Bake for 20 minutes or until the cheese is melted and bubbly. Serve warm.

Notes

Serve with sour cream, guacamole, or salsa. Garnish with fresh cilantro or diced tomatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for about 2 months.
