Ingredients
  

For the Burritos

  • 10 large flour tortillas
  • 12 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • to taste Salt and pepper
  • to taste Salsa or hot sauce (optional)
  • to taste Fresh cilantro (optional)

Instructions
 

Cooking

  • Heat a large skillet over medium heat. Add the diced onions and bell peppers, and cook until they are soft, about 5 minutes.
  • In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet with the veggies. Stir gently and cook until the eggs are set.
  • Add the cooked sausage or bacon to the egg mixture. Stir to combine.
  • Warm the flour tortillas on a grill or skillet until they are soft and pliable.
  • Scoop some of the egg mixture onto each tortilla. Sprinkle cheese on top.
  • Roll the tortilla tightly around the filling. Place seam-side down on the grill for a few minutes until golden and crispy.
  • Serve with salsa or hot sauce on the side, if desired.

Serving

  • Cut the burritos in half and serve them warm with salsa, hot sauce, or diced avocado on the side.

Storage

  • If you have leftovers, let the burritos cool completely. Wrap each burrito tightly in plastic wrap or aluminum foil, then place them in an airtight container or zip-top bag. Store in the refrigerator for up to 3 days. You can also freeze them for longer storage, thaw in the fridge before reheating.

Notes

Make a big batch of the filling ahead of time to save time in the morning. Feel free to add other ingredients like avocado, cheese, or beans to customize your burritos. If grilling tortillas, brush them lightly with oil for extra flavor and to help them crisp up. You can also consider using whole wheat or corn tortillas for a different taste and adding proteins like diced chicken or tofu for a vegetarian version.
