Ingredients
  

Main Ingredients

  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 each bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 2 cups uncooked rice
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions
 

Preparation

  • In a crock pot, combine the chicken, sausage, onion, bell pepper, celery, and garlic.
  • Add the diced tomatoes, chicken broth, uncooked rice, Cajun seasoning, salt, and pepper.
  • Stir to combine all the ingredients well.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  • Fluff the rice with a fork and garnish with green onions before serving.

Notes

Crock Pot Jambalaya is best served warm. Pair with a side salad or crusty bread. For extra flavor, marinate the chicken in Cajun seasoning before cooking. Adjust the spiciness by adding more seasoning as desired. Feel free to customize with additional vegetables or different proteins.
