  • 1/4 teaspoon salt

  • 1 egg Can be substituted with flaxseed meal mixed with water for a vegan option.
  • 2 tablespoons melted butter
  • Maple syrup For serving.

Preparation

  • In a mixing bowl, mash the ripe bananas.
  • In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the milk, egg, and melted butter.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour 1/4 cup of the batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Serve pancakes warm with maple syrup on top.

Notes

To store leftovers, let them cool completely before placing in an airtight container. Refrigerate for up to 3 days or freeze for longer storage.
