  • 1 pound ground beef or Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Preparation

  • In a large pot over medium heat, brown the ground beef or sausage with the diced onion and minced garlic. Drain excess fat.
  • Add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
  • Stir in the broken lasagna noodles and simmer for about 10-12 minutes, or until the noodles are tender.
  • Remove from heat and stir in ricotta cheese until well combined.

Serving

  • Serve hot, topped with mozzarella and Parmesan cheeses, and garnish with fresh basil.

Notes

For a smoother texture, you can blend the soup after it’s cooked. Feel free to add vegetables like spinach or zucchini for added nutrition. Adjust the spices to your liking—try adding red pepper flakes for a little heat! If you have leftovers, store it in an airtight container in the refrigerator for about 3-4 days. To reheat, warm on the stove or in the microwave, adding extra broth or water if necessary.
