  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups spinach or kale
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

Cooking the Soup

  • In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat if necessary.
  • Add the chopped onion and garlic, and sauté until softened.
  • Stir in the crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
  • Add the broken lasagna noodles and cook according to package instructions until al dente.
  • Stir in the spinach or kale until wilted.
  • In a bowl, mix ricotta cheese with a bit of salt and pepper.

Serving

  • To serve, ladle the soup into bowls, top with a spoonful of ricotta, and sprinkle with mozzarella and Parmesan cheese.

Notes

Serve the soup hot with crusty bread or a fresh salad. Use fresh herbs for more flavor and consider adding vegetables like bell peppers or mushrooms. Add red pepper flakes for a spicy kick.
