Ingredients
  

Beef and Potatoes

  • 2 lbs beef stew meat, cut into bite-sized cubes
  • 1 lb baby potatoes, halved or quartered if large

Sauce Ingredients

  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme Essential for flavor.
  • 1 tsp dried rosemary Essential for flavor.
  • Salt and pepper, to taste
  • 2 tbsp olive oil For searing the beef.
  • Fresh parsley, chopped (for garnish) Adds a nice color and freshness.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the beef cubes with salt and pepper and sear in batches for about 2-3 minutes on each side until browned. Transfer to the slow cooker.

Garlic Butter Sauce

  • In the same skillet, melt 2 tablespoons of unsalted butter and add the minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in the beef broth and Worcestershire sauce, scraping up any browned bits. Stir in dried thyme and rosemary.
  • Pour the garlic mixture over the beef in the slow cooker.

Combining

  • Add the halved baby potatoes to the slow cooker and toss to combine with the beef and sauce.
  • Place the remaining 2 tablespoons of butter on top of the mixture.

Cooking

  • Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the beef is tender and potatoes are cooked.

Final Touches

  • Taste the dish and adjust seasoning if needed before serving.
  • Garnish with freshly chopped parsley and serve warm.

Notes

Serve warm; pairs well with salad or bread. Store leftovers in an airtight container for up to three days.
